This vegan quesadilla uses seasoned jackfruit in place of meat, giving it all the heartiness and flavor it needs! The medley of spinach, peppers, corn, black beans, and vegan cheese round it out to make it an overall fulfilling quesadilla. This quesadilla is made with vegan cheese. Perfect for light lunch.

Stove:
